Black and white limes are fresh limes (and sometimes lemons) that have been soaked in saltwater and sun-dried until they’re rock hard and roughly the size of a walnut.
They’re a popular ingredient in the Middle East where they go by various names – loomi, noomi basra, limoo amani – depending on where you are and what you’re cooking.
The darker “black” limes, which have been left in the sun for longer, have a weird, wonderful, more complex flavour, whereas the light brown (“white”) ones are bright and zesty.
When we crush them in our apple mill before each run, it makes the distillery smell just like green and yellow Skittles.
Native to southeast Asia, Citrus hystrix (also known as kaffir or makrut lime) is a thorny dwarf shrub with glossy, oily, insanely-fragrant leaves.
Although they’re unmistakably lime-like when distilled, they’re also intensely floral, which adds a whole new dimension to the spirit.
All our leaves are sourced directly from small independent growers in Portugal and the UK, and we distil them as soon as they arrive for absolute, maximum freshness.

Any orders placed before 1pm Monday to Thursday should arrive within 2-3 business days using Royal Mail Tracked 48.
Since orders can only be processed and shipped during normal business hours, all orders received on Friday after 1pm, or anytime Saturday and Sunday, will ship the following Monday.

Although we aim to get your parcel to you in perfect condition, occasionally damage occurs in transit. If your parcel shows clear signs of damage or leakage at the time of delivery, we ask that you refuse receipt of the parcel and ask the agent to return the goods to sender. If the damage only becomes apparent after
you open the parcel, then please contact us immediately with photographic evidence so we can raise it with our courier, Royal Mail.
